Easy, Cheesy Zucchini Bake

We could eat cheese with everything. The one thing that I love about the low carb diet, is that we’re allowed to eat cheese. I don’t think I could make a long term lifestyle change that cut out dairy. With that being said, we put cheese in at least one meal a day. We can’t help it. This cheesy, easy zucchini bake is no exception.


This dish is perfect for the cheese lover in your family. It’s creamy, cheesy, and the garlic helps add a pop of flavor. We’ve recently highlighted a lot of dishes that make you want to eat your vegetables and this baked dish is simple and serves that purpose.

With only 4 main ingredients, you can whip it up with what you may already have in your kitchen. Let’s get started!



Easy, Cheesy Zucchini Bake

This easy zucchini bake is perfect for busy nights. With only a a few ingredients, you can wow your family with the perfect side dish.

  • 4 zucchini
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper
  • 3 tbsp heavy cream
  • 1/3 cup cheddar cheese split in half
  • 1/3 cup mozzarella cheese split in half
  • 1/4 cup parmesan cheese grated (optional)


  1. Preheat your oven to 375.

  2. Slice your zucchini into thin slices.

  3. Toss in a bowl with salt, pepper, garlic powder and olive oil.

  4. Lightly grease a casserole dish. Spread out zucchini slices into the casserole dish.

  5. Bake for twenty minutes. At ten minutes through, stir.

  6. If there is any water in the dish, drain/pat it out. 

  7. Add heavy cream and half of your cheese. Stir.

  8. Put back into the oven for ten minutes.

  9. Top with the rest of your cheese and put back into the oven for 5-10 minutes, or until the cheese is melted.
