Crispy Polenta Slices With Marinara and Mozzarella
A few months back while on vacation, we got a side of crispy polenta with one of our main dishes. It was the first time ever trying the dish, and we were HOOKED. We started researching ways to cook polenta and came up with these Easy Crispy Polenta Slices With Marinara and Mozzarella. If you’ve never had polenta and are wondering what exactly it is, allow us to explain!
Polenta is a north Italian dish made of coarsely ground corn.
When it’s made fresh, it’s soft and creamy. When it is cool, it’s firmer and can be sliced to be pan fried, like this dish. You can get a tube of polenta at the grocery store, and that’s what we used for this recipe. It’s delicious!
The brand that we purchased was called “Ancient Harvest,” and we found it near the dry pasta. There were a few different brands to choose from and I’m sure that they’re all great!

Crispy Polenta Slices With Marinara and Mozzerella
These crispy polenta slices are perfect appetizers for dinner parties or a great side dish!
Ingredients
- 1 tube polenta
- 2 tbsp olive oil
- 1 jar marinara sauce or you can make your own!
- 1/4 cup shredded mozzarella
- fresh basil
- 1 tsp minced garlic
- salt and pepper to taste
Instructions

Begin by slicing the polenta into thin slices.

Season both sides of the slices with salt and pepper.

Heat marinara sauce in sauce pan over medium-low heat.

In a large frying pan, add olive oil and heat over medium heat for 1 minute. Add minced garlic. Add polenta slices, careful not to overlap them.

Cook for two minutes, or until browned on first side, then flip.

Cook for another two minutes, or until browned.

Take polenta out and drain oil on a wire rack.

Set them on a dish and add warm marinara, top with mozzarella and fresh basil.

Serve and enjoy!
