Crispy Parmesan Garlic Chicken Thighs
There’s nothing that I love more than crispy, flavorful chicken skin. We love making whole chickens at home, but sometimes it can be hard to get that crispy skin. Recently, we’ve been experimenting with thighs – and came up with this recipe for crispy, garlic parmesan chicken thighs.
The secret is to coat the chicken in Greek yogurt, lots of seasoning, and then bake it at high heat. They’re so simple and the cook is perfect. Every. Single. Time.
We like to make this on busy weeknights. It’s done in less than half an hour and so easy. While the chicken is baking, we’ll prep another try of broccoli or cauliflower, toss in olive oil and seasonings, and then bake it right alongside the chicken. The roasted vegetables always pair so well! If you’re eating low carb, this is definitely a great meal solution.

Crispy Garlic Parmesan Chicken Thighs
These crispy garlic parmesan chicken thighs are coated in greek yogurt, topped with garlic and parmesan, and broiled for extra crisp!
Ingredients
- 4 chicken thighs
- 1/4 cup greek yogurt
- 1/4 cup parmesan cheese
- 1 tbsp garlic powder
- 2 tbsp fresh parsley, chopped
Instructions

Preheat oven to 450 F.

Add chicken thighs and greek yogurt to a large bowl.

Stir until the yogurt is coating all sides of the chicken.

Add the parmesan and garlic. Stir well.

Add half of the parsley.

Bake for 25 minutes or until internal temp of 165.

Top with additional parmesan and fresh parsley.
