For all of those reasons, there isn’t anything we love to cook more than a delicious pork roast. Pork is one of those versatile and attainable proteins that can bring people together. When cooking a large cut of pork, it can serve a ton of people, and the leftovers can be utilized fantastically in many delicious ways. For this recipe, we love turning the leftovers into sandwiches and tacos!
Here is our tip for cooking pork: temperature! This is crucial to get right with pork. For cuts like pork chops and tenderloin, cook to an internal temperature of 145⁰F followed by a 3-minute rest. This is where the flavor is at! For a large muscle like pork shoulder, while it’s safe to eat once it reaches 145⁰F, you’ll have the best eating experience when it reaches about 190⁰F. You can add whatever kind of veggies you’d like to this recipe, but we kept it simple with carrots and fresh apples. If you don’t like adding sweet flavors to your savory dishes, you can replace the apples with onions, mushrooms, or even peppers.
Cooking all of this in the Instant Pot is a great way to have a beautiful roast, plus veggies as a side.

Instant Pot Pork Shoulder With Apple Cider and Fresh Apples
Ingredients
- 1 pork loin
- 3 apples
- 3 carrots
- 1 onion
- 4 garlic cloves
- fresh thyme
- garlic powder
- paprika
- 1 cup chicken powder
- salt & pepper
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
Instructions

Start by chopping apples, onions, carrots, and garlic.

Season your pork loin with garlic powder, salt, and pepper.

Put your instant pot on saute. Add olive oil and sear pork loin on both sides. Set aside.

Add onions to the pot.

Once cooked down, add carrots, apples, and garlic.

Add ACV to deglaze.

Add apple cider and chicken broth.

Season with salt, pepper, and paprika.

Put roast on top.

Pressure cook for 20 minutes with a slow release and enjoy!
