This easy recipe only requires a few ingredients and can technically be done with just one pot. The lemon really wakes up the flavors, the ricotta makes it beautifully creamy, and the spinach adds in a nice nutritional element.

This recipe can easily be tweaked to your liking. I’ve made it with a few different types of pasta and have enjoyed it each time. I’ve also added in some frozen or left over veggies to make it even more filling – or even add on a protein like chicken or shrimp.
