Pimento Cheese Mashed Potatoes
We’ve been working on our Thanksgiving menu and I finally perfected my mashed potatoes for this year: Pimento Cheese Mashed Potatoes. These easy and creamy potatoes are so full of flavor and delicious.
We recently visited Georgia for the first time. While there, we ate a ton of pimento cheese and fell in love with the delicious spread. If you haven’t tried pimento cheese yet, it’s a creamy cheddar based spread that is mixed in with pimento peppers. You can usually find it in the gourmet cheese section of your grocery store.

This spin on pimento cheese features the famous spread, cheddar cheese, cream, and garlic powder. It’s super simple and is one of my favorite unique Thanksgiving sides!
If you want to add extra flavor, you can add fresh roasted garlic and chopped parsley. Let’s get started!
Pimento Cheese Mashed Potatoes
These pimento cheese mashed potatoes are going to be your new favorite Thanksgiving side dish!
Ingredients
- 6 baking potatoes peeled and chopped into 2 inch chunks
- sea salt to taste
- 4 tbsp pimento cheese spread
- 1/4 cup cheddar cheese shredded
- 1/3 cup whole milk or cream
- 1 1/2 tsp garlic powder
- black pepper to taste
- 1/2 stick butter
Instructions

Begin by peeling and chopping your potatoes.

Boil salted water and add the potatoes. Boil for 15 minutes or until fork tender.

Strain the potatoes and mash with a masher. For extra creamy potatoes, you can run them through a ricer first.

Add butter and stir in until melted.

Add pimento and cheddar, stir until melted and fully combined.

Pour in milk and mash more, until fully combined.

Add garlic powder, salt, and pepper.

Serve and enjoy.
