Curry Roasted Cauliflower With Mint Yogurt Dip

This Curry Roasted Cauliflower is such a great appetizer and pairs so well with the cooling mint yogurt dip!

  • 1 head of cauliflower
  • 2 tsp curry powder
  • 2 tsp garlic powder
  • 1 tbsp chopped mint
  • 1/2 fresh lemon
  • salt to taste
  • 1/3 cup greek yogurt
  • 2 tbsp olive oil


  1. Begin by preheating the oven to 350 degrees.

  2. Wash and chop your cauliflower.

  3. Put the cauliflower in a large bowl and toss with olive oil, garlic, curry, and a dash of salt.

  4. Lay them out on a large baking pan and pop it in the oven for 20 minutes.

  5. While the cauliflower is baking, in a small bowl add yogurt, mint, and juice from your lemon half.

  6. Add a dash of additional curry and a dash of salt.

  7. Mix well.

  8. Crank your oven up to 450 and cook for an additional 4 minutes. Flip them and put them back in for 3 more minutes.

  9. Serve and enjoy!
