This Curry Roasted Cauliflower is such a great appetizer and pairs so well with the cooling mint yogurt dip!
Begin by preheating the oven to 350 degrees.
Wash and chop your cauliflower.
Put the cauliflower in a large bowl and toss with olive oil, garlic, curry, and a dash of salt.
Lay them out on a large baking pan and pop it in the oven for 20 minutes.
While the cauliflower is baking, in a small bowl add yogurt, mint, and juice from your lemon half.
Add a dash of additional curry and a dash of salt.
Crank your oven up to 450 and cook for an additional 4 minutes. Flip them and put them back in for 3 more minutes.
Serve and enjoy!
