These potato pancakes take just a few ingredients and are so easy to make!
Combine all ingredients, with the exception of the vegetable oil, into a large bowl.
Add vegetable oil to a frying pan, coating the bottom.
Add large spoonfuls of the mixture onto the frying pan.
Flatten into a pancake with a spatula.
Flip after 2-3 minutes, or until crispy and brown.
Brown the other side.
Set on a plate with a paper towel and garnish with a little extra salt and pepper.
Serve with sour cream or apple sauce! Enjoy!
