Mexican Cauliflower Rice

This Mexican cauliflower rice is delicious and you can almost convince  yourself that you're not eating low carb!

  • 1 package frozen riced cauliflower
  • 1/4 cup tomato sauce
  • 1 tsp minced garlic
  • 1 tbsp butter
  • 1 tsp cumin
  • salt to taste


  1. Begin by cooking the frozen riced cauliflower by the bag instructions. If it is a steamer, go ahead and cook it in the microwave.

  2. In a large frying pan, melt butter and add garlic. Brown garlic until fragrant. 

  3. Add tomato sauce and cumin. Stir well.

  4. Add riced cauliflower and mix well. 

  5. Cook covered on medium for five minutes.
